Not only will it help you overcome mealtime paralysis, it also gives you the confidence to rule the market-fresh goodness in your Market Veggie box.Tandoori Chicken w Cucumber Raita + Tomato Salad This is my easy go-to recipe.Marinate chicken thighs in 2-3tbsp tandoori paste mixed with yoghurt, a squeeze of lemon or lime (if you have) for at least 30 mins.For the Cucumber Raita grate cucumber and squeeze out water, mix through yoghurt with ground cumin, ground coriander, sea salt, lemon juice.For the tomato salad dice tomatoes, dice half a small red onion, chop coriander and mix together.Place chicken on a foil-lined grill pan and cook under a preheated hot grill, turning occasionally, for 10–15 minutes, until well-cooked inside and golden brown outside. Serve with rice or in warm pitta bread as a wrap.Hoisin Beef +Veggie Stir Fry Combine 1/3 cup hoisin sauce, 1 tablespoon shao hsing wine (Chinese cooking wine), finely grated ginger and 2 crushed garlic cloves in a bowl. Place beef in a glass or ceramic bowl. Add half the sauce mixture. Toss to coat. Cover with plastic wrap. Refrigerate for 1 hour, if time permits.Heat a wok over high heat. Add half the oil. Swirl to coat. Stir-fry thinly sliced beef rump steak, in batches, for 2 to 3 minutes or until just cooked. Transfer to a bowl. Wipe wok clean with paper towel.Add remaining oil to wok over high heat. Swirl to coat. Add diced celery and carrot. Stir-fry for 3 mins or until softened. Add snow peas and thinly sliced capsicum. Stir-fry for 2 minutes or until vegetables are just tender. Return beef to wok. Add remaining sauce mixture. Stir-fry for 1 minute or until heated through. Serve with jasmine rice.Salmon Teriyaki w Miso Eggplant, Cucumber + CarrotMix 125ml light soy sauce, 100ml mirin, 100ml sake, 30g castor sugar together in a small saucepan over low heat, until the sugar is just dissolved. Cook salmon fillets and add sauce just before fish is cooked. Turn the salmon in sauce to coat.For the miso eggplant, use this recipe. Halve the quantities as you only have one eggplant. Serve with rice, carrot and cucumber sticks. Burgers w Lettuce, Tomato +CucumberThis is a great recipe at the end of the week as it uses up all your leftover veggies.Use your favourite burger pattie recipe or try this one. Grate any leftover vegies, ie carrots, zucchini or celery to add to the mince mixture. To jazz up, serve with Sriracha mayo (combine the mayonnaise, Sriracha and lemon juice).If time permits make caramelised onions. Heat a large frying pan on medium-low. Cook 2 thickly sliced red onions, turning occasionally, for 15 mins or until very tender. Sprinkle with sugar and vinegar.
